Pepperoni n Cheese Bun


I love baking breads, once you get the hang of the kneading and proofing method, you're off into a wonderful world of bread making.  That's the exact moment you would wish your bread maker wouldn't work and you gladly chuck it out. When you get that feeling then you are ready to bake bread!   
I would love to get my hands on how to make sourdough breads though but I am not ready of the idea  of making and caring for the sour dough yet. One of these days I shall overcome this needless fear and bake away, so till then I hope you would enjoy this  Cheesy Pepperoni Bun.
I kneaded the dough by hand but I wrote it down as you would use your machine...but hey try kneading by hand, you would love it. If you do , give it a good 15 min of kneading, till the dough appears smooth.

A
480g bread flour
120g plain flour
110g sugar
10g salt
20g milk powder
4tsp instant yeast

B
1 egg
300ml water

C
60g butter

For the filling
Pepperonis
Cheddar cheese - shredded 
salt and pepper

In a mixer, with a hook attachment, mix all the ingredients in A in a big bowl
Add B and knead it to form a dough. Now add C and continue kneading till the dough is smooth.
Oil a big bowl and place the dough, covering with a tea towel. Let it prove for about an hour.
Punch the dough down and divide dough into 60g portion and roll into a balls and let it rest for 10 min.

Take each dough ball and knead it lengthwise, about 6in and flatten it a bit. Arrange the pepperoni slices  and sprinkle with loads of cheese, salt and pepper. Gently roll it and tuck the seam. Put it in a baking tray and repeat for the rest. Make sure you leave a good distance between each bun and let it sit for an hour. Egg wash just as you are about to bake.

Heat oven to 180 deg cel. Bake for 20 min until buns are golden color. Remove and set aside to cool.
