Tomato Rice



Nasi Tomato  (translated  Tomato rice)  is one of the many well known dish in Malaysia, predominantly served by the Malays. Being a multiracial country we see it as a Malaysian dish that we enjoy. 
The last time I ate this rice was at a wedding and I loved it ever since, though this is the first time I'm cooking it at home.
A simple dish to prepare and it goes really well with curries.

5 cups of rice - washed
1/2 cup of evaporated milk
11/2 tsp salt
1/2 cup of tomato ketchup
Water - according to your measures for the rice (I used 6 cups of water)
2 screw pine - knotted

Saute ingredients
3 pips of garlic - chopped
5 shallots - sliced
1 in ginger - chopped
3 cloves
3 star anise
1 cinnamon stick
3 cardamom 
2 tbs ghee
3 tbs cooking oil

4 tomatoes - chopped

In your rice cooker pot place the washed rice and the water and the rest of the ingredients.
In a frying pan, over a medium heat,  saute all the ingredients till the onions are tender. Add the tomatoes and cook for a minute. 
Remove from heat and pour it into the rice pot.
                                                                               
                
 
Press the start button on your cooker. When the rice is cooked, gently mix it around.
The rice is ready to serve. Great with any curried chicken or lamb. See recipes below.
