Baked pau - Siew pau


I am  hooked to this baked Siew Pau ever since my first bite years ago and I can't seem to stop. 
That made me want to learn  how to bake this pau! 

My take on this delicious pau. 
For those of you in the same predicament, I urge you to give a go.  I've included enough pictures to help you with the steps. 


First you need to make the filling.

300g or One strip of prepared char siew (sweet roasted chicken or pork), chopped into small pieces
4 small shallots - sliced fine 
1tbs oil 
1 tbs oyster sauce
 salt to taste
1 tbs sugar
1 tbs dark soy sauce
1 tsp sesame oil
1 tbs Chinese cooking wine 
1 tsp starch mix with 2 tsp of water
1/4 cup of water

Pour oil in a frying pan (medium heat) and add the shallots, saute till golden brown.
Add the char siew and give it a stir. Add the rest of the ingredients, except the starch and keep stirring till well combined.
When the mixture is bubbling, add the starch and give it a good stir until the sauce thickens.
Remove from pan and set aside to cool.

Ingredients for the oil dough
200 gm flour
130 gm shortening

Ingredients for Water dough 

200 gm all purpose flour
40 gm icing sugar
40 shortening
100 ml water

20ml oil

Egg wash

1 egg - beaten
some sesame seeds 


Mix all the ingredients of oil dough together and knead till you get a soft dough. Set it aside to rest for 30 minutes.
Mix all the ingredients of water dough together and knead till you get a soft dough. Set it aside to rest for 30 minutes. 

Divide both dough into 20-22 equal pieces. 
Wrap the oil dough into the water dough (lighter color and more stretchable)  and flatten it.


Roll the dough out into a longish flat piece. Roll it up like a Swiss roll. 
Turn 90deg, and roll out again and roll it up like a Swiss roll. 
Press dough with palm and lightly roll out into a circle. (Do this twice)




Roll the dough round, put about 2 tsp of the char siew filling in the center and gently tuck in tightly, making sure the seam is sealed.



Place on a greaseproof paper.Brush pie with lots of egg wash, sprinkle with some sesame seeds and bake at 200 deg cel for 20-25 minutes or until golden brown.
