Wholemeal Onion Bread



 A simple and  easy bread to bake and produces a soft crust with moist center. This is one bread that I bake so often.


A
300g bread flour

100g whole meal flour
30g sugar
2 tsp instant yeast
1 tsp salt

B
260ml water
25 ml olive oil

C
1 large red onion- sliced
1 tbs olive oil

1 tsp dried oregano and rosemary

Topping
Onion rings
Some dried parsley and rosemary



Heat frying pan in a low heat. Pour oil and saute the onion till golden brown ( takes about 8 min). Remove and let it cool.
 

Lightly oil a large container and set aside.
 
Put A into the bowl of a mixer fitted with a dough hook (don’t put the salt directly on top of the yeast). 

Add the olive oil and three-quarters of the water and begin mixing on a slow speed. As the dough starts to come together, slowly add the remaining water. Then mix for a further 5-8 minutes on a medium speed until the dough is smooth and stretchy.

 Tip the dough into the prepared tub, cover with a tea towel and leave for 1 hour.
Dust your work surface with flour. Tip out the dough  onto the work surface and  knocking it down.

 Roll the dough into a rectangular shape and rub some olive oil all over. Evenly spread the cooled down caramelized onion.  Sprinkle the dried herbs. 

Just like rolling a Swiss roll, roll the dough and tuck the seams underneath. Gently lift the roll and place it in a baking tin.  Set it aside in a warm place to proof for one hour.

Heat your oven to 190°C. Rub some olive oil and place some onion rings on top, don't forget to sprinkle some dried herbs. Bake for 25 minutes, or until the loaf is golden brown and sound hollow when tapped on the base. Cool on a wire rack.
