Fruit Rojak
Yum...this salad just spells my name...Period.
A
1 tbs tamarind paste dissolved in 100ml water
3 tbs shrimp paste (hae ko or otak udang)
Half ( the pic below) crushed palm sugar about 2 tbs
1 tsp belacan powder
1 tbs oyster sauce
2 tbsp sambal, or to taste (see below for the recipe)
You may use fruits of your choice, I opt for these
1/2 cup each of
jicama,
cucumber
pineapple
green mango
kedongdong

raw papaya - sliced
raw papaya - sliced
1 tbs toasted sesame seed
toasted and crushed peanut
In a small sauce pan add A and cook in a low heat until the sauce thickens. Remove from the heat and let it cool down. Add the sesame seed.
Cut all the fruits above in wedges, uniform in its size.
To prepare the salad, In a large bowl place the sauce and add the prepared fruits and give it a good toss.
Add a generous amount of peanuts and mix well, sprinkle more peanuts on individual bowls for serving.
Normally this salad is served with some crackers, since I'm not a big fan of that, I've skipped it; you may add if you wish.
Now dig in.
