Sweet Potato bread
Freshly baked bread always make my day and this crusted loaf is the deal.
Adding the sweet potato made this bread moist and soft in the inside with a golden crust on the outside.
I can't stop admiring the lovely color as I try to spread the melting butter and each bite truly kept to its name!
A slice of this freshly baked sweet potato bread and a cuppa seems just perfect.
175g sweet potato, cooked and mashed
190ml water
350g bread flour
2 tbs rolled oats
1 1/2 tbs milk powder
1 tsp salt
1 tbs molasses
2 tbs butter
1 tsp yeast
for the topping
2 tsp roll oats
As usual I am using my bread maker to knead the dough. In your bread basin add the wet ingredients first (potato,water n molasses). Gently add the flour and followed by the rest of the ingredients in separate corners.
Set the machine to dough cycle and press start.
When the cycle is complete, remove the dough and place it in an oiled bowl and cover it for about an hour.
In a well floured bench, punch down the dough and knead it. Place the dough in a rectangular bread pan. Set it to proof for another hour.
Preheat the oven to 180 deg cel and bake for 35-40 min.
Don't forget to sprinkle some oats on the top.
