Dundee Cake


I've been meaning to bake this  fruit cake for some time and finally got to do one.


300g raisins
75g mix peel
40ml rum or brandy ( or more if you prefer)
1 orange juice
1 orange zest
1tsp cinnamon
3eggs
150g butter
150g  brown sugar
150g flour

Soak the dried fruits with brandy and juice, set aside for a day or two, stirring well occasionally.

Beat butter and sugar till creamy. Add egg one at a time, beating well each time.
Add flour and keep mixing. Add the fruit mix, zest and give it good stir.

Pour into a prepare 6 in pan and arrange almonds as shown above. 
Bake in a preheated oven of 160 degree for about 11/2 hour or till done when the skewer inserted comes out clean. Drizzle some brandy over the hot cake - this is optional.
Wrap the with cling wrap once the cake is cooled completely and set aside for a couple of days before serving.
