Corn Salsa with feta



One of my favorite salad...
I can eat the whole bowl...

2 cups of fresh corn kernels,
1/2 cup finely diced red onion
1/2 cup cherry tomatoes, quartered
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
pinch of salt and pepper
bunch of cilantro - chopped
feta cheese - roughly broken

Bring a  pot of water to a boil. When boiling, add one teaspoon of salt.  Add the corn  and bring to a boil. Cover the pot, remove from the heat and let the corn sit for 5 minutes. Remove the corn from the pot and strain. 


Toss the kernels in a medium bowl with the rest of the ingredients.  Gently crumble chunks of feta before serving.
Serve with tortillas or anyway you wish to enjoy.
