Kuih Seri Muka # 2


If you had read my first Seri Muka kuih post, (see below) I did ramble on and on about how this kuih brought out the ugly side of me. Well I've grown up a bit  (cough...cough) and tackled this kuih with poise.

This time round I added the dreaded eggs and hoped for the best. I used the Omega-3 eggs purely to get rid of the dreadful eggy smell and whatdya know, it worked.

I also used concentrated pandan juice; to obtain this, you simply blend about 12 leaves (cut into smaller pieces) with enough water, probably 1/2 cup and blend it. Sieve it and let it stand overnight and you'll see the separation. Slowly pour off the top liquid and, you've got yourself a thick pandan juice.


Bottom Layer
1 1/2 cups Glutinous rice, soaked overnight  and drained
200ml thin Coconut milk
1  tsp salt
2 Pandan leaves - tied into a knot

Steam glutinous rice with coconut milk, pandan leaf and salt for 30 minutes.  

Discard leaf and press steamed rice onto a bottom of a 8" square/round pan. At this point you want to compress or press down the rice firmly. Steam this for another 15 min.






Top Layer
 3 eggs
180g Castor Sugar
100ml Pandan extract
200ml Coconut Milk
2 tbs  All-purpose Flour
4 tbsp corn flour
¼ tsp salt

Beat egg with sugar until sugar is dissolved. Add in pandan water, coconut milk and salt. Mix well. If you want a deeper color, just add a drop or two of green coloring.

Sift in flours and whisk till well combined. Strain the mixture. Do not skip this part.


Pour the mixture in  a pan and cook in double boil method, stirring consistently until the mixture appears thick. Do not let the mixture get too thick.


Gently pour onto the  pressed glutinous rice and steam over low heat for 25 minutes. Do not open the lid until the time is up.

See the bottom picture. This consistency is WRONG. This picture is from one of my many attempts. The consistency has to be much much thicker than this. 




Remove from steamer, cool completely. Gently run a knife all around the pan.  Cut into small pieces and gently lift the pieces to serve.





That's it.  Left over kuih stays fresh in the fridge for one day. Keep it covered though.
