Indian style Cabbage
My version of cooking cabbage in Indian style. You can either use the regular thin leaf or the Beijing cabbage, either one would work fine.
2 shallots - sliced
1 tsp dry prawns - bruised
1 twig of curry leave
1 tsp mustard seed
1 medium size cabbage- sliced thinly
1 carrot - shredded
1 red or green chili - sliced
In a medium heat wok, heat 1 tbs of vegetable oil. When the heat is hot add the mustard seed and immediately add the shallots and saute for a minute. Add the curry leave and the dry prawns and give it a good toss until the prawns are fairly brown.
Add the carrots and stir fry it for a minute before adding the cabbage and the chili. Give it a quick toss and season with salt and pepper. Cover the wok and let it cook for about two minutes on a medium flame.
Give it a minute of stir again and you are done. Serve veg with steamed rice.
