Barley n Sweet Potatoes Dessert




My boys  (actually they are 25, 22 and 21!  That's how long I've been making this dessert) favorite dessert and its a fairly quick dessert to make in no time. 
You can enjoy it hot but we do love it chilled in the freezer and eat it super cold (that's why the boys love it). The trouble is, we just can never  wait for it to get chilled and we end up eating it warm. Not that we are complaining, it's equally good.

100g of pearl barley (washed and drained)
2 cups of water
2 screw pine leaves -knotted

10 tbs of sugar
2 cups of coconut cream

*1 Purple/Japanese sweet potato 
*1  sweet potato (Orange skin)
* peeled and diced in symmetric , potatoes are medium size

                               

In a pressure cooker pot, add the barley, screw pine leaves and water. Cover the lid and let it boil for 15-20 min in a low heat. Do not cook it too mushy.
Remove from the heat and gently let the steam out.

In another pot, add 2 cups of water, a pinch of salt and the diced potatoes. Cook until the potatoes are soft, about 15 min. Drain and set aside.

When the barley is cooked, add sugar and the cooked potatoes. Put the cooker back on the fire (on low heat) and add the coconut cream, and let it simmer. Do not let it boil. Remove 
from the heat.

                       

Cool the dessert to room temperature and refrigerate it for 4 hours or you can leave it in the freezer for an hour to speed up.
