Home-made Pure Vanilla extract

Ever since I learn how to make my own vanilla extract I've never bought one from the store .  All you need  are these  two simple ingredients,  vanilla beans and a bottle of vodka and of course  you need a wee bit of time.

You'll need:
3 vanilla pods
1 cup of vodka
1 distilled glass bottle with cap.

Split the beans lengthwise with your knife and put them in your bottle. Add vodka and cover them completely. Store in a cool dark place for about 10 weeks.  Shake the bottle vigorously every two days. It's interesting to see the color changing from amber to a darker shade.

Keep topping it up with vodka as your supply goes down, do not discard the pods.  You may wish to add fresh bean. Just remember to keep shaking (not you, the bottle I mean) every other day.

For a non alcohol version simply replace vodka with food grade glycerin.

Happy baking...jue
