Basic Chocolate Cupcake
Love this chocolate cupcakes form Martha Stewart.
I was surprised how soft and moist the texture was that it just melts in my mouth.
It was so yummy that we chomped it without the need for any frosting.
Perhaps the next time I would frost it with some peanut butter frosting or salted caramel!
3/4cup cocoa powder
3/4cup all-purpose flour
1/2tsp baking powder
1/4tsp salt
3/4cup(170g) unsalted butter, room temperature
1 cup sugar
3 large eggs
1 tsp vanilla extract
1/2cup sour cream
Preheat oven to 180 c. Line 12-cup standard muffin tin with paper liners
In a medium bowl, sift together cocoa, flour, baking powder, and salt and set aside.
In another mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each, then beat in vanilla.
Add flour mixture in two batches, alternating with sour cream and beginning with flour.
Pour batter into cups, filling each ¾ full. Bake for 20-25 minutes or until a toothpick inserted in centres comes out clean.
Cool in pan 5 minutes then transfer to a wire rack to cool completely.
