Carrot cake with Orange




I love dressing up  plain carrot cake  with other fruits and  flavors to bring out the 'already fantastic' cake to a different level. I have a long list of flavors that I want to incorporate in this cake but today I am going with oranges and nutmeg.
 

the verdict:
To my delightful surprise, it taste great. A MUST try! I love the hint of the nutmeg and orange, though subtle but they work well together.

A
2 1/2 cup flour
 1tsp bicarb. soda
 1 tsp nutmeg
1 tsp ground cinnamon
1/2 tsp salt

B
21/2 cup brown sugar
1 1/2 cup vegetable oil
4 eggs
1/4 cup milk
1/4 cup orange juice
zest of 1 orange
11/2 tsp vanilla extract

2 cup grated carrots- press it firmly
2 cup roughly chopped pecan nut

Pre heat the oven to 180 deg. Celsius and prepare the cake pan. I would suggest a 10in round or square pan,as this a fairly large cake.
Sieve A in a large bowl.  In another bowl add B and mix it thoroughly until it changes to a light creamy texture.
Add the carrot and mix it in completely and lastly the nuts.
Bake for about an hour or until the tooth pick test comes out clean. Cool the cake before applying the frosting.

For the frosting


250g cream cheese
50g butter
100g icing sugar
2 tbs orange juice
1tsp zest.
 

Give all the ingredients a good whip, until its light and creamy. Spread generously over cake and cut yourself a huge slice...
