Apple Crumble




Apple crumble with roll oats is my 'must have' morning snack...and later in the day, another 'must have' snack, with a dollop (or two) of  vanilla ice-cream on top.

For the crumble 
2 cups roll oats
1/2 cup of melted butter
1/4 cup of brown sugar - adjust to your preference
1/2 cup of almond meal


For the filling
3 green apples and 3 red apple, skinned and cut into small pieces
1/2 cup of toasted chopped walnuts
1/2 lemon zest
2 tbs lemon juice
1/2 cup brown sugar
1/2 cup golden raisins
1/2 cup of walnuts 

Skin and core the apples. I used Granny Smith, Brae-burn and Gala. 
Cut them into small pieces. Pour the lemon juice over the apples so they don't brown.
Mix the rest of the ingredients for the filling and put it in a oven proof dish. 
(I use an oven proof glass dish). 

{Spread the roll oats on a baking sheet and  bake for 10 min. (180 deg cel)
I usually toast  the oats first to cut short on the final baking time. This is optional.}

Preheat oven 160 degree C.
Mix all the ingredients for the crumble and set aside.

Spread the crumble over the apple evenly to cover and press it gently. 
Bake for 30 min or until the top is browned evenly and the apples appears soft.
Serve hot or chilled.
