Banana Fritters



Normally my daughter Kate would finish up any bananas hanging around in the kitchen but she overlooked this batch, probably because it was beyond her reach. 
Usually I would opt for my favorite banana shortbread or muffins, but it's been a long time since we had this kueh, simply called Kodok - a deep fried banana fritter. 
My husband made this one.
  • 1/2 cup of whole wheat flour
  • 1 cup of plain flour
  • 1/2 cup of freshly grated coconut
  • pinch of salt
  • 1 tsp of baking powder
  • 1 1/2 cup sugar
  • 4 ripe bananas
Mix all the above in one big bowl and mix well till you get a nice thick batter. Using a round ladle, scoop batter and gently drop into a heated pan with about 1 cup of oil. 



Fry on a medium heat till it turns golden brown and them place on a kitchen towel to drain any excess oil. Serve warm.



You know you can even make a pancake with this batter if deep frying is not your stuff or you could steam them, for a twist. (Steaming takes about 30 min). 

You would need to beat in an egg and a tsp of vanilla extract if you making pancakes. I've tried both and its good.
