All about chocolate icing...

These icings and frostings are ideal for spreading over cupcakes, cakes, layering it between cakes or simply drizzling it over your favourite ice-cream. Simply chose one and Enjoy. I shall post some pic soon. Happy Caking...Jue


Chocolate butter icing
4oz butter - soft
3oz dark chocolate - melted and cooled
3oz sifted icing sugar


Place butter in a mixing bowl and beat till fluffy. Pour chocolate and continue whisking till well combined. Add sugar and continue beating till creamy for about 5min.


White Chocolate frosting
Use 3oz white chocolate - melted and cooled. Follow the rest as the chocolate butter icing method.


Chocolate Fudge Icing
5oz fine sugar
3 fl oz evaporated milk
4oz dark chocolate- broken into small pieces
1 oz butter
1/2 tsp vanilla extract


Place butter and milk in a pan, simmer over a low heat. Mix well till the sugar has dissolved.


Add chocolates, stir till melted. Add butter and vanilla extract. Pour frosting in a bowl and let it cool. Chill till frosting thickens.


Chocolate Ripples
110g chocolate - broken into pieces
2 cup whipped cream- chilled


Melt chocolate and let cool. Pour chocolate into cream and fold gently creating ripples.


Chocolate Ganache
24oz semi sweet chocolate chips or blocks broken into chunks and 1 1/2 cups of heavy whipping cream.


Create a double boiler by filling a pan with 2 in of water and bringing to boil. Place cream in a bowl and put on top of simmering water, without touching. Bring it to a gentle boil. Remove bowl. Pour chocolate into cream, do not stir. When the chocolate has melted, whisk it. Allow it to cool before frosting.all
