Cucumber salad..Chinese style
I love cucumbers. Period.
This salad is a fairly simple and quick one to make which is often served as sides in any barbecue or spicy wings to cool down. For me this salad never made that far...
1 Large Japanese or English Cucumber 1 tsp Sea Salt
A
1 Clove Garlic, chopped - I normally use 4-5 cloves A Big Pinch of Sugar
1/2 tsp Coarse Chili flakes
pinch of cayenne or paprika powder 3 Tbsp Vinegar 2 tsp Sesame Oil
Sesame seeds - toasted To start off you need to bash up the cucumber a bit., just a bit. I usually get the rolling pin out and give it a few knocks to soften it up. Add some salt and give it a toss and set aside for 30 min to draw out all the water from the cucumber.
Give a taste and adjust the seasoning with additional sea salt, if necessary.
Place the cucumber in a bowl and add rest of the ingredients in A. Give it a good mix and set it aside again for another 10 min. Serve cold.
Done.
