Chewy chocolate chips oat bars
My initial plan of making some healthy roll oats bars got derailed when my son decide to meddle in and added the entire chocolate chips in the pantry.
Since the healthy version is down the drain, here's the not so healthy chewy chocolate chips oat bars.
It's not bad,
5 cups rolled oats
4 Tablespoons brown sugar
1/2 cup Hawaiian flaked sweetened coconut
1 cup of any nuts or seeds you prefer - chopped and toasted
1 cup of chocolate chips
2/3 cup oil (any vegetable oil, canola or extra-light olive oil)
2/3 cup honey
2 teaspoon vanilla extract
Preheat oven to 190° c
Line a large square pan with parchment paper or silpad
Combine oats and the dry ingredients in a large bowl.
Combine honey, oil, and vanilla in a small bowl.
Add honey mixture to oat mixture and combine well.
Spread in baking pan, pressing down very firmly perhaps using the back of a measuring cup or any flat item.
Bake for 30 minutes. Cool completely in pan.
Remove from pan to cutting board. Remove paper and cut into bars. Or you may leave it in the fridge for 20 min or so to firm it up and using a sharp serated knife, cut into squared. Place it in a tight Tupperware and store it in a fridge to keep it chewy, fresh and crisp.
