Corn Fritters
How cool is this...all my favorite veg in one pattie, dunked in yogurt dip!
I made this fritters wheat free, by adding oat flour ( I blitz some regular oats) and some corn mill.
I made a large batch and rolled it in patties and freezed it.
1/2 cup plain Greek yogurt
3 Tablespoons olive oil
1 Tablespoon honey
2 teaspoons minced garlic
2 teaspoons apple cider vinegar
juice 1 lemon
salt, to taste
FRITTERS
3 cups corn kernels
1/2 cup oat flour
1/2 cup corm mill
1/2 cup finely chopped red or green pepper
1/4 cup finely chopped cilantro
1/4 cup finely chopped green onion
2 teaspoons honey
2 teaspoons minced garlic
1/2 teaspoon smoked paprika
1/2 teaspoon salt
couple pinches fresh ground black pepper
2 large eggs
2 Tablespoons oil for frying
Make the yogurt dip by whisking all of the yogurt sauce ingredients together except for the salt, add salt to your taste.
Make the fritters: Mix all of the fritter ingredients together in a large bowl and because it was not a runny batter I rolled it into patties. If you prefer a runny batter just add some milk or water.
Heat the oil in a skillet over medium-high heat.
Once hot, place the patties gently and cook it until it is browned on both sides.
Transfer to a paper towel lined plate until finished.
Serve warm fritters with yogurt dip.
