Fish sambal




I seldom make fish sambal, but things are gonna change after this delicious dish.


3 tbs of cooking oil

A
3 large onion- sliced thickly
1 lemon grass - slice fine
5 pips garlic - bruised and chopped

B

2 in shrimp paste (belacan)
1/2 cup of cooked chili paste
2 tbs of brown sugar
1 cup water

4 Medium Ikan Selar Kuning ( Yellowtail Scad) or fish f your choice
salt to taste 

To fry fish, simply add 1 tsp of salt and 1 tsp of tumeric powder and coat the fish well. In a hot wok add about 1 cup of oil, gently fry the fish. Remove and set aside.

To prepare the sambal, heat a the wok to medium heat and pour the oil. 
Saute A until the onions are soft and brown, cook about 5 minutes.

Add B and mix continuously to avoid the paste from sticking to the base of the wok. Slow the heat if necessary and stir for about 5 minutes. Add salt to taste and you're done with the sambal.
                             
                                  

Now add the fried fish and gently stir to coat the sambal evenly. 

Serve warm with steamed rice.
