Salmon with garlic butter sauce


I was in a bit of luck when we swept a good bargain with fresh salmon fillet at our mart and happily headed to the kitchen for our favorite salmon dish with garlic butter sauce. 

We normally have it with some mash but today we went with rice and some  sauted broccoli. Yum, I must say, it was one satisfying meal. 

Mind you, this dish is loaded with butter and chopped garlic (my sons are bit eccentric when it comes to this sauce) so I'm going a bit crazy here. I left it open to you to add the butter and garlic to your liking.

First, season the fillet with same salt and pepper. Heat a frying pan with some butter and oil, about 1 tbs of each. Pan fry the fish and set aside.

For the sauce for about 4 fillets
Butter
1 tbs oil
1 clove of minced garlic
salt and pepper
Beef cube seasoning
Milk
1 tbs of flour
Dill

Put a sauce pan on a moderate heat with some butter and oil. When it is hot enough add the garlic and saute till it turns golden brown. 
Add the flour and saute it till it turns brown, mind the heat at this point and lower it down. Add milk according to how thick you desire for sauce. 
Keep stirring and add the seasoning to your taste and the dill. 
Let it simmer gently, add more milk or water if it gets too thick.
Pour over the fish and enjoy.
