Sloopy Joe
The first time I ate or even knew this mush called Sloopy Joe, is when I met my Ray, way back in the 80s.. it's a sorta an improvised version of American chili with his own twist, that is minus all the herbs (which he hates) that's normally used in this dish.
We ate simply by dunking bread into the chili. Very hearty and satisfying meal and it's a very simple dish to make, unlike the American version that takes ages cooking.
2 cans of luncheon meat
2 can of baked bean in tomato sauce
500g of minced beef
2 large onion- chopped
salt and pepper
1 cup of tomato sauce
2 tbs of chili powder
water
In a large pot, add enough oil and saute the onions for about 10 minutes.
While the onion is frying, roughly chop the luncheon meat into chunks and set aside.
Add the chili powder and cook it thoroughly, meaning the chilie powder should cook in the oil for about 5 minutes.
Add the ground beef into the pot and give it a good stir, taking care not to burn the bottom, that should take about another 5 minutes, keep stirring.
Once the ground beef is cooked, add the luncheon meat and about 2 cups of water. Give it a good and cover the lid and let it gently simmer for 10 minutes.
Lastly, the beans and seasoning to taste, let it simmer for another 10 min and done.
Serve with hard bread or over hot dogs.
