Mocha Fudge Browmies



It's literally been ages since I baked or ate a cake...let's just say I've been super lazy.  So to satisfy my craving, I opted for this quick and delicious Mocha fudgy brownies instead, (well, technically brownie is  a cake.)

I've reduced the sugar quite a bit from the original recipe, since I'm not a big fan of sweet cakes, (the original measure calls for 2 cups). With the generous amount of ganash  lathered over the brownie, it makes up for the reduced sugar in the cake.  

All Purpose Flour 1 cup 
Baking Powder 1½ teaspoon 
Salt ¾ teaspoon 

Semi Sweet Baking Chocolate Chopped  335g
Butter unsalted 1 cup

Granulated Sugar 1 cup 
Eggs 6 Large 
Vanilla Extract 1 Tablespoon
Dutch processed cocoa powder 3/4 cup
Instant coffee 2 tsp

One batch of ganach
                                       
Combine the sugar and the eggs and vanilla in a large bowl and whisk together vigorously to incorporate evenly.

Meanwhile in a microwave safe bowl or over a double boiler melt the butter and the chocolate together. Remove form the heat and add cocoa powder and instant coffee and give it a good whisk.

Sift all the dry ingredients together, set aside.

Add the melted chocolate & butter mixture to the egg/sugar mixture and whisk to incorporate.

Add all of the dry ingredients at once and mix just until incorporated.
Pour entire batter in prepared pan and bake in preheated 180° c oven for 30-40 minutes or until a toothpick inserted into center produces a moist crumb.

When the brownie is cooled, spread ganash and cut into squares.
