Tomato and Dill Salsa



Great as an accompaniment with grilled fish or chicken.  

I normally take a heap of this salsa and generously spread over a slice of hard crusted bread...with a slice of smoke salmon, of course.

1 small onion 
1 green chili 
2 ripe red tomatoes
4 yellow tomatoes
1 tbs dill
1 tbs coriander leaf

1/2 tsp salt
2 tbs extra virgin olive oil
2 tbs lemon or lime juice
1/8 tsp pepper

Finely slice the onion, chili, tomatoes and the herbs. Place them in a bowl. 
In a separate bowl mix the salt, oil pepper and lemon juice. Pour over the tomato and give it a good mix. 
For best flavor set aside in the fridge for an hour before using.
