Banana Wholemeal Loaf
One way to use up ignored and over-ripe bananas on your kitchen counter.
Normally I would opt for a cake or my favorite fritters but I think I made a good choice with this loaf.
It's simple and fast to prepare, which is just perfect to serve for breakfast or at tea time.
Let's get started.
A
250g sugar
90g oil
1 tsp sodium bicarbonate
1/2 tsp salt
B
2eggs
C
300g mashed bananas
D
100g plain flour
200g whole meal flour
1/2 tsp baking powder
E
80ml milk
F
100g chopped walnuts
Preheat the oven to 180 deg. celcius. Prepare two loaf tins.
Cream A till the sugar and oil with a whisk till are well incorporated. Add the egg one a time and beat till its creamy.
Now add the banana and give it a good beat.
Sieve D and add the flour a little at a time alternating it with milk until the flour is evenly mixed. Lastly add the chopped nuts. You may add some more nuts to sprinkle on top.
Bake for about 35-40 min or until the skewer comes out clean when you insert in the middle of the cakes.
And it's so satisfying with a cuppa.
Enjoy...jue
