Coconut milk bun


For me baking has a twofold effect, it's a  fail-prove stress buster and  two it makes me happy. Happy  just being in the kitchen muddling through my ingredients and pans, creating something for my family. 

Of course at times buns and cakes don't turn out as intended but hey who cares, simply toss it out or eat up all the evidence and start again!
Rest assured this didn't happened to these lovely buns, infect it came out beautifully and l do love the snail shell shape.


1/2c coconut milk
1/2c milk
1/4c water or less
1 egg
1 tsp vanilla extract
4c bread flour
1/3c desiccated coconut
1 tsp salt
1/4c sugar
3tbs butter
1tsp yeast

For topping
melted butter
brown sugar
I'm using my bread machine to knead the dough. You can use a mixer with a hook handle
or simply knead by hand.
Place the coconut milk, milk , egg and extract in the basin. I suggest you hold on to the 1/4 cup water.
Pour flour and coconut in and cover the liquid. Add the salt, sugar and yeast in separate corners.
Set the machine to dough setting and press start.  Add the water a little at a time if you find the dough too dry. 
If the dough is soft then discard remaining water. Kneading  for about 15 min. Let it rest for 45 min.
Transfer the  dough to a floured board. 
Knock the dough down and divide into twelve equal portion.

Take one piece and roll it to a long rope, about 12-15cm.  Curl it to a spiral on the prepared pan and tucking the end under to seal.
Repeat with the rest, spacing them well apart. 
Let it rest for another 30min.

Preheat oven to 200*C. Brush the top with some melted butter and sprinkle with some brown sugar.
Bake for 12-15 min till bun are golden. Cool and enjoy.
