Cucumber Raita # 1
I love paring this refreshing Cucumber Raita salad with spicy curries or chicken.
3 medium size cucumber
3 small onion/shallots
1 green chili seeded
Dash of pepper and salt
1 cup of yogurt
1 tbs lemon juice or lime
Peel the cucumber skin and remove the seeds. Grate it and squeeze the liquid out.
Finely cut the onion and the chili. Add to the cucumber.
Add the rest of the ingredients.
Mix well and chill for about 15 min before serving.
