Fried Sweet Potato Balls




Hubby's childhood snack. 

200g of sweet potatoes
pinch of salt
80g sugar
50g freshly grated coconut

for the batter
100g flour
pinch of salt
1/4 tsp turmeric powder
30g rice flour 

Boil the skinned sweet potatoes till tender and place it in a large bowl. Mash it fine and add the rest of the ingredients. Give it a good mix. Divide the potatoes into golf size balls.

For the batter, mix all the ingredients and pour enough water to make a thick batter.
Heat enough oil to deep fry, making sure the heat is at medium.

Drop a potato ball into the batter and give it a good coat and gently drop it in the oil. Fry until it turns golden brown, probably for 3 minutes. Remove and place it in  kitchen towel to absorb any excess oil. Repeat for the rest.

A great tea time snack.
