Simple Beef Rendang



Another take on Beef Rendang, a simpler straight forward method without compromising on the taste. 
And with No oil!
500g beef - cut into cubes

salt  and pepper

900ml  coconut cream
3 tbs kerisik - roasted coconut
4 kaffir lime leaves
2 tumeric leaves


Blend the ingredients below
15 shallots
5 pips of garlic
1/2 in fresh turmeric
1 in fresh ginger
2 sticks of serai
1 in lengkuas
12  red chili

1 tsp salt

Marinate the beef with salt and pepper for about 30min. Set aside.


Heat up  a wok.  Add the blended ingredients and the coconut cream and give it a good mix in a medium heat until it bubbles gently.

Add the meat and continue cooking and stirring for about 10 min.
Now add the shredded kafir and tumeric leaves, also the kerisik.

Reduce the heat to low and continue to simmer until the aroma rises and begin to  turn brown.  At this point the gravy tends to be oily.

 The simmering in total takes about an hour, the long cooking time makes the beef tender and  it absorbs the rich flavors of the other ingredients.
Check the taste and add seasoning accordingly.

                                                  

 Done. Serve with warm rice.
