Basic Muffins
Something I haven't baked in a long time... good old muffins. It's like watching your favorite rerun... you feel nice and cozy.
I prefer my muffins done in whole wheat flour, with lots of raisins and seeds but the boys and Belle wanted theirs loaded with chocolate! Lots of it.
And husband likes his with jam filling.

From this basic muffin you can add on blueberries or banana for an added twist for breakfast.
dry ingredients
2 cups of plain flour
(for whole wheat muffins add 1 cup whole wheat flour and 1 cup plain flour)
1 cup of sugar
1 tsp baking powder
1 tsp salt
1 tsp cinnamon powder
wet ingredients:
2 eggs
1 tsp vanilla extract
1 cup milk
1/2 cup of melted butter or sunflower oil
Preheat oven to 180 degree. Butter the paper cups and place them in the muffin tray.
Mix the dry ingredients in a big metal bowl. In another bowl mix all the wet ingredients and beat well.
Pour liquid in to the flour mixture and gently mix until there is no trace of flour. It doesn't matter if the batter is lumpy.
Gently fill 1/4 of the cups. Drop some chocolate chunks in it and top up, not to top. (Same with jam filling)
Bake for about 15-20 min till done.
Perhaps tonight I'd make a batch of my good old wholewheat muffins.
