Yogurt Marmalade TeaCake
Enjoyed ever bite of this yogurt orange teacake, or rather it's the bitter marmalade pieces and the sourness of the yogurt that really brought out this distinctive taste.
I ran out of orange marmalade jam so I made my own by gently simmering the orange skin( without the white part), orange juice, 2 tbs of lemon juice, 2 tbs of sugar and some water.
A
1 1/2 (6oz) cake flour
1/2 tsp salt
2 tsp baking powder
B
1 cup yogurt
1 cup sugar
3 eggs
1 tsp vanilla extract
1 orange zest
½ cup oil
Glaze
3 tbs thick cut marmalade orange jam
3 tbs yogurt
Heat it in a microwave, just to a gentle heat.
Prepare a 5in square tin (or you could use a bread loaf tin) and preheat the oven to 180 degree Celsius.
Sift A in a bowl.
Mix B in another bowl, mixing it until well combined. Lightly add the flour and mix it in a gentle sweep taking care not to over mix the batter.
Pour batter and tap gently for any trapped air bubbles.
Bake for about 30min or until the skewer comes out clean.
Pour the glaze over the cake and bake for another 4 min with the heat turned to the top.
Cool the cake and cut into a nice square pieces
