Dates n Carrot Cake
A brilliant twist to my favorite carrot cake.
Granted dates are sweet but this combo definitely works and the chewy bite is something else. Good thing I switched it with the raisins.
No, I'm not even going to ice it with cream cheese!
Just perfect with my cuppa coffee.
The wet ingredients.
2 cups brown sugar
1 cup sunflower oil
4 eggs
1 tsp vanilla extract
Using a wooden spoon, mix the above to a good whip. Set aside.
The dry ingredients.
2 cups flour
1/2 tsp bicarb soda
1 tsp baking powder
1 tsp cinnamon powder
1/2 tsp nutmeg - grated
1 tsp salt
Sieve the above ingredients.
2 cups grated carrots- firmly packed.
1/2 cup walnuts - broken
1/2 cup dates - seeded and cut into chunks.
Preheat oven to 180 degree cel. and prepare a pan.
Add the dry ingredients little at a time and incorporate well into the wet ingredients.
Add the carrots and the rest and mix it well with a wooden spoon until well combined. Pour into pan and bake for 40 min.
Cool the cake before removing from the pan.
