Cucumber Raita # 2
Another version of my Cucumber Raita salad. I added a green and tomato for a twist.
3 medium size Japanese cucumber
3 small onion/shallots
1 green chili seeded
1 Granny smith apple
1 ripe tomato
Dash of pepper and salt
1 cup of Greek yogurt
2 tbs lemon juice
Dash of sumac
Peel the cucumber skin and remove the seeds. Grate it and squeeze the liquid out.
Finely cut the onion and the chili. Add to the cucumber.
Grate the apple and cut the tomato into small pieces.
Add the rest of the ingredients.
Mix well and chill for about 15 min before serving.
