Coleslaw




Getting the home-folks to eat their salad is impossible but never the case when I serve coleslaw!  

  
I usually follow the same basic method of making coleslaw but decided to add on some twist to it ... raisins! 
As you chew the crunchy veg, a small burst of sweetness from the raisins takes the coleslaw to another level.

I dont measure the ingredients so the veg are my rough measurement.


1 large head green cabbage, thinly shredded

½ cup onion, finely diced
2 large carrots, shredded
1 green chili, finely chopped

A

1 cup mayonnaise
¼ cup lemon juice
honey

1/2 teaspoon black pepper, coarse ground

1 teaspoon salt
Handful of raisins or sultanas

In a large bowl toss together the cabbage, onion and carrots. 

In a small bowl mix A and add to the cabbage mix.  Give it a good mix. 
Leave sit in refrigerator at least an hour before serving.

Now the best ever coleslaw is ready .
