Mocha brownie


I've never tried brownies with coffee and after a slice of this glorious wonder I'm kicking myself for not trying one sooner.


115g chocolate - break into pieces
50g butter
175g brown sugar
2 eggs
1 tbs instant coffee dissolved in 1 tbs hot water
85g plain flour sift with 1/2 tsp baking powder
55g chopped walnut


Prepare and line 8in square tin
In a bowl place butter and chocolate, microwave till both are melted. Carefully remove and stir till combined. Set aside to cool.
In another bowl cream sugar and eggs. Add the cooled coffee  and  chocolate mixture, stir  to combine.
Fold in flour and nuts and mix well.
Pour mixture in pan and bake 180 deg cel. for 25 min. Do not over bake else brownie will be dry.
